Sifton makes two kinds of hamburgers.
June 11, 2014 - New York, NY : New York Times writer and editor Sam Sifton prepares a "pub" style hamburger, top, and a "diner" style burger, bottom, in a cast iron skillet during a studio shoot in Brooklyn on Wednesday morning. Sifton makes the burgers in a skillet so they can cook in their own juices. The "diner" burger, bottom, will be smashed into a flat patty to expedite cooking.
