Sifton makes two kinds of hamburgers.
June 11, 2014 - New York, NY : New York Times writer and editor Sam Sifton describes the difference in hamburger patties between a "pub" style hamburger, bottom right, and a "diner" burger, top left. The "pub" burger patty, which is larger, is shaped into a fat hockey puck. The smaller "diner" burger, in contrast, assumes it's characteristic frisbee shape when it is flattened during cooking.
